Bawri is an entity of Red Wine Ace Private Limited. A vernacular word for crazy, could be the only way to describe our vision. Why else would Founder Sahil Sambhi and Chef Amninder Sandhu set out to break the shackles of what is often expected of Indian cuisine? At Bawri, you will see a crazy love story come to life. A love story panning passage of decades, longitudes and latitudes of India through heirloom, regional Indian recipes. On the forefront of this love story is Chef Amninder Sandhu, a bawri who has set out to rekindle the romance of traditional Indian cooking through this menu that pays homage to age old recipes, techniques that are almost long-lost, and bold, complex flavours that she so masterfully draws out from locally-sourced ingredients. The menu at Bawri has been mindfully crafted with recipes from Chef Amninder’s family and friends who have graciously passed them down to her, trusting that only she can honour the sincerity with which they were cooked for decades. You will find yourselves moved by our passion to nurture you through this meal made with pure ghee from grass-fed cows, cold- pressed coconut oil and olive oil, poultry that’s free from antibiotics, greens and spices from their regions of origin.
